It is a shame that Disney didn't allow the authors tom continue writing books in the "Legends" timeline. They are honestly a lot more interesting than the stuff Disney is cranking out in my opinion!
I started on SW books during the boom in the 90s. The Jedi Academy Trilogy got me hooked. I fell off for a bit but then got back in with, in my opinion, the BEST books: the Darth Bane Trilogy.
All of the EU stuff that focuses on the Sith I think are pretty good. My tip recommended EU would be Plageus, the Darth Maul books, and the Vader one(and of course Bane)
I was a EU snob for a while, but in my old age I'm giving the Cannon stuff a fair shake. Finished the first of Wendig's Trilogy and am 1/3 of the way through Shadow OF The Sith. I like SotS quite a bit, and Wendig's story and characters are good, but he goes WAY overboard on the in-universe metaphors.
Both are good. The legends has the best vilain ever : my man Tsavong Lah. There are some good stories. But the new canon too. I do not know the title in english but Riposte (written by Chuck Wendig) is a masterpiece. And all the stuff about the High Republic is very interesting (Marda and Yana Ro rock !)

But, hey, none of us is perfect. 😎
